Mr. Van Dyke's Cinco de Mayo Fusion Scrambled Eggs
A festive, bold twist on a classic breakfast!
Ingredients:
- 3 large eggs
- 1 small dollop (about ½ tsp) of horseradish sauce
- ¼ cup Mexican blend shredded cheese
- Salt & pepper to taste
- ½ banana, sliced (optional)
- Honey (for drizzling over the banana)
- Your favorite salsa (for serving)
Instructions:
- Whisk the eggs in a bowl with the horseradish sauce until well combined. Season with salt and pepper to taste.
- Heat a non-stick pan over medium-low heat. Lightly grease with a bit of oil or butter.
- Pour the eggs into the pan and let them set slightly before stirring.
- Add the shredded cheese while cooking, stirring gently to melt it into the eggs.
- Remove from heat when the eggs are fluffy and just set—avoid overcooking!
- Plate and serve with a spoonful of salsa on the side—your favorite variety!
- Optional sweet side: Arrange sliced banana and drizzle honey over it for a little balance.
