Mr. Van Dyke's Cinco de Mayo Fusion Scrambled Eggs

A festive, bold twist on a classic breakfast!

Ingredients:

  • 3 large eggs
  • 1 small dollop (about ½ tsp) of horseradish sauce
  • ¼ cup Mexican blend shredded cheese
  • Salt & pepper to taste
  • ½ banana, sliced (optional)
  • Honey (for drizzling over the banana)
  • Your favorite salsa (for serving)

Instructions:

  1. Whisk the eggs in a bowl with the horseradish sauce until well combined. Season with salt and pepper to taste.
  2. Heat a non-stick pan over medium-low heat. Lightly grease with a bit of oil or butter.
  3. Pour the eggs into the pan and let them set slightly before stirring.
  4. Add the shredded cheese while cooking, stirring gently to melt it into the eggs.
  5. Remove from heat when the eggs are fluffy and just set—avoid overcooking!
  6. Plate and serve with a spoonful of salsa on the side—your favorite variety!
  7. Optional sweet side: Arrange sliced banana and drizzle honey over it for a little balance.
